Berry Chia Seed Jam

This berry chia seed jam recipe puts a healthier spin on an everyday classic. It's refined sugar free, loaded with vitamins and antioxidants from the berries and is full of flavor. With summer being around the corner, berries are abundant at local farmers markets. In this recipe we used blueberries, raspberries, strawberries, and blackberries. Adding chia seeds that contain antioxidants, omega-3 fatty acids, calcium, iron, and fiber, takes this everyday favorite to the next level of healthy. This delectable jam is great on toast, croissants, bagels, or your classic oatmeal. You can add more nuts and seeds to make it hearty. If you're a fan of parfaits, add it as a tasty topping. Berry Chia Seed Jam

1 cup of jam

Ingredients
- 2 cups of fresh or frozen mixed berries*
- 2 Tbsp Chia Seeds
- 1 Tbsp syrup
- Juice from half an orange (about 1-2 tbsp)
Method
- In a medium bowl, combine the defrosted berries, chia seeds, and orange juice. Use a large fork to mash the berries until the mixture is fairly smooth.
- Stir in the yacon syrup. If you would like your jam a bit sweeter, you could add more yacon syrup to taste.
- Let the mixture sit in the fridge for about half an hour so the chia seeds can absorb some of the moisture and plump up.
- Enjoy!

*If using frozen berries, defrost them first.
