Pea Mole and Jicama on Fresh Figs

This is an amazing and simple recipe adapted from the bookLiving Cuisine by Renee Loux Underkoffler. Fresh, flavorful and zesty! Perfect for summer!
Ingredients
- 1 C cilantro
- 2- 2 1/2 C fresh peas
- 1/4 cup lime juice
- 1-2 Tbsp sacha inchi oil
- 1 tsp black pepper
- 1 tsp Kalahari salt
- 1 jicama, peeled and sliced thin
- 1 C fresh figs
Directions:
- Finely chop cilantro.
- Add to food processor with peas, lime juice and oil and pulse slightly.
- Season with salt and pepper.
- Cut figs in half and spread a good amount of the mole on each fig slice and top with sliced jicama.
- Enjoy!
