Peanut Butter & Superfood Raw Bars

This superfood raw bars recipe is a take on a classic peanut butter and jelly sandwich. We can reminisce for hours about our favorite ways of eating peanut butter. A staple for many, peanut or almond butter is even better when coupled with superfoods. We've got a good recipe for you today. We call it a perfect craving fixer because it checks off all the boxes: peanut butter, superfoods, delicious, satisfying, and it's a clean swap for a sugary treat.

Ingredients:
Bottom layer:
- 1 cup refrigerated almond butter
- 3 Tbsp coconut flour
- 1 Tbsp honey
Middle layer:
- 1 cup pitted dates
- 3 Tbsp coconut butter
- 1 Tbsp peanut butter
- 1/4 tsp Himalayan Sea Salt
- 1/2 tsp vanilla powder
Peanut layer:
- Small handful of Jungle Peanuts
- 1 tsp of peanut butter
- 1 tsp of honey
Top layer:
- 1 cup Whole Cashews
- 1/4 cup of coconut butter
- 1/2 cup of combined frozen blueberries and raspberries
- 2-3 Tbsp of Beet Powder
- 1 Tbsp of honey

6-8 squares
Ingredients
- BOTTOM LAYER
- 1 cup refrigerated Almond Butter
- 3 Tbsp Coconut flour
- 1 Tbs honey
- MIDDLE LAYER
- 1 cup pitted dates
- 3 Tbsp coconut butter
- 1 Tbsp peanut butter
- 1/4 tsp Pink Himalayan Salt
- 1/2 tsp Vanilla Powder
- PEANUT LAYER
- A handful of Jungle Peanuts
- 1 tsp peanut butter
- TOP LAYER
- 1 cup raw Cashews
- 1/4 cup coconut butter
- 1/2 cup frozen blueberries and raspberries (combined)
- 2-3 Tbsp of Beets+ or Beet Powder
- 1 Tbsp honey
Method
- In a food processor, mix the bottom layer ingredients till smooth
- Press into a baking pan lined with parchment paper.
- Set in the fridge.
- Mix middle layer ingredients in a food processor excluding the peanuts.
- Then smooth the middle layer into the pan over the bottom layer.
- Set back in the fridge.
- Process (lightly) a small handfull of Jungle Peanuts, then add 1 tsp of peanut butter with 1 teaspoon of honey. Process again lightly keeping peanuts crushed, but not milled.
- Top with crushed peanuts layer and setback in the fridge.
- Process top layer ingredients and spread over peanut layer.
- Set the pan in the freezer for about 1.5 - 2 hrs.
- Take out. Slice and enjoy!
