Red, White, and Blueberry Superfood Popsicles

Say it with us: superfood popsicles! If you haven't tried making popsicles, start now! These are mouthwatering, cooling, and a delight to enjoy on a hot summer day. Are you hanging by the pool with friends or enjoying alone time sunbathing in the backyard? Make a batch of these delicious pops and enjoy all the benefits of superfoods.
Ingredients:
White layer
- 1 can full-fat coconut milk
- 1 can lite coconut milk
- 1 tsp vanilla extract
- 2 tbsp maple syrup
Blue layer
- 3 tbsp Sunfood Açaí Maqui Bowl Mix
- 1 cup fresh blueberries
- 2 tbsp maple syrup
Red layer
- 2 tsp Sunfood Pomegranate Powder
- 1 cup fresh strawberries, hulled
- 1 tbsp maple syrup
Method:
- Create base coconut milk layer: Mix white later ingredients in a bowl and set aside.
- Create second layer: Blend red layer ingredients with 1/3 cup of the coconut milk base. Add more coconut milk base as needed for a smooth consistency.
- Pour red layer evenly among popsicle molds, no higher than 1/3 of each mold.
- Pour 2 tbsp of the coconut milk base gently into each mold.
- Create third layer: Blend blue layer ingredients with 1/3 cup of coconut milk base.
- Gently pour blue layer evenly among the popsicle molds, leaving about 1 inch.
- Gently pour the rest of the coconut milk base into each popsicle mold, leaving a little room for the popsicles to expand as they freeze.
- Freeze overnight. Release popsicles by running the popsicle mold under warm water for 20 seconds. Enjoy!
