Simple Protein-Packed Raw Chocolate Brownies
Nov 11th 2014
Brownies are my boyfriend right now. Seriously, I can’t go a day without one anymore. Which is why I have two pans of brownies in my refrigerator right now...
No, that doesn’t mean I’m about to break out my fat pants. I’m talking about protein packed raw chocolate brownies! Chocolatey, chewy, and healthy?! I know I was shocked too when I was first introduced to these lovely things. But now that I have this recipe, I’m completely addicted.
These brownies call for soaked nuts, and you're probably wondering why on earth would you do that? The simple answer is that by soaking the nuts, you are breaking down the phytic acid so it can be absorbed properly. This makes the nuts go easier on your gut and digest properly. You end up absorbing more nutrients this way. Learn more about soaking nuts here.
To receive all these benefits, you need to make sure the nuts you buy are raw. I can’t find raw nuts at my local grocer, so I buy these macadamia nuts and these cashews.
I know you're dying to see how these wonderful brownies are made, so lets dive right in!
Start by soaking your nuts in enough water to cover them for 6 hours. After this soaking period, you should notice that they have plumped up and softened a bit. Then add the soaked nuts, chocolate protein powder, hemp seeds, cocoa powder, coconut oil, vanilla, and salt to a food processor.
Process until it is a somewhat smooth paste.
Using your hands, press into a parchment lined 8x8 baking dish. It helps if you lightly grease your hands. Chill in a refrigerator for 2-3 hours.
Remove the brownies by pulling out the parchment. Cut into squares, and enjoy!
