Sweet Peas, Mint & Moringa Soup

Ingredients
- 2 Tbsp olive oil
- 2 Tbsp fresh mint, minced
- 2 large shallots, diced
- 2-3 cloves of garlic
- 1 ¾ cup fresh or frozen peas
- 1 ½ cups vegetable broth
- 1 ½ tsp Sunfood Moringa Powder
Method
- Heat the olive oil over low heat in a medium pot.
- Finely shop the mint, shallots, and garlic cloves.
- Add these ingredients to the pot and cook over low heat until shallots are translucent, about 5 minutes.
- Add the peas and broth and bring to a simmer. Stir occasionally and allow soup to simmer for about 15 minutes.
- Add the Moringa Powder and cook for another 1-2 minutes.
- Pour soup into a high-power blender or use an immersion blender and blend until smooth and season with salt and pepper to taste.
- Serve with a drizzle of olive oil on top.
