Vegan Seed & Nut Superfood Energy Balls

Heading back to school next week has been making me think – what is going to be an easy snack I can carry with me to keep my hunger curbed through all those long classes and keep me focused?! First things first - any good snacks include protein – nuts are my favorite, and of course great flavor. With these priorities in mind I created these superfood vegan protein balls. They are simple to make and delicious.

Vegan Seed & Nut Superfood Energy Balls

Ingredients


  • 1 cup Sunfood cashews
  • 1 cup pitted dates
  • 3 Tbsp coconut oil
  • 1 Tbsp Sunfood chia seeds
  • 2 Tbsp nut butter (I used sunflower seed butter)
  • 3 Tbsp Sunfood cacao nibs
  • 2 Tbsp pumpkin seeds
  • 1 Tbsp Sunfood golden berries
  • 1 Tbsp coconut necktar
  • 1 tsp cinnamon

Method

  1. Pit 1 cup of dates. Cut in half length wise then remove seed. Set aside.
  2. Add cashews to blender or food processor.
  3. Pulse cashews until they are small like a chunky powder.
  4. Add all other ingredients.
  5. After ingredients are combined well, add to a glass bowl and squish up with your hands.
  6. Take of one inch pieces, then roll into hands.
  7. Add formed balls to wax paper on a cookie sheet.
  8. Chill in sheet for 30-45 minutes before enjoying.
