Why Are We Deficient in Vitamin C?

Scientists have determined that approximately 40,000 years ago humans lost their own ability, through a genetic mutation, to manufacture vitamin C. Fruits and vegetables were abundant in their diet, and thus vitamin C was not difficult to obtain. However, through time, our dependence on consuming fruits and veggies for this vitamin became clear. Scurvy was found to be caused by a severe deficiency of vitamin C in the 1930s.
Although it is harder to be severely deficient in vitamin C today, mild cases of deficiency exist much more than we think! This can result in weakness, anemia, lack of energy, even depression and mood irregulation.
